我国淮扬菜系现状及发展对策研究

摘要:淮扬菜有着悠久的历史和深邃的文化底蕴,在其漫长的发展过程中曾演绎过辉煌的历史。自古以来,淮扬菜不仅在国内而且在海外都享有盛誉。但近年来没有像川菜、粤菜一样在我国餐饮市场占据领军地位。在餐饮市场迅速发展和不断变化的今天,淮扬菜应在继承优良传统的基础上,顺应市场变化,积极改革创新,主动参与竞争,既要重视形象塑造,追求规模效益,实施品牌战略,增强创新意识,又要准确市场定位,提升文化品位和改善用人机制,以谋求长远的发展。淮扬菜要进一步发展,必须进一步扩大淮扬菜在海内外的影响。

The present condition and strategic study on the development of Huaiyang cuisine in China

Abstract: Huaiyang cuisine boasts a long history and deep cultural sense, in its long developing process, has witnessed a period of brilliant history. Since the ancient time Huaiyang style dishes have enjoyed high reputation both inside and out side of China. However, in recent years, it hasn’t taken a leading position in catering market such as Sichuan and Cantonese cuisine. Today, facing the rapid development and unceasing change of catering market, Huaiyang cuisine, on the basis of inheriting the fine tradition, should conform to the marketing change, pursue active reform and innovation and take initiative part in the competition. On the one hand, Huaiyang cuisine should pay enough attention to its image portrayal, seek large-scaled profits, practice brand strategy and strengthen innovation ideology; on the other hand, it has to find its fixed place on the market, raise its cultural grade and improve employment mechanism with a view to pursue its long-term development. In order to achieve the further development of Huaiyang style dishes what must be done is to strengthen the influence of Huaiyang style dishes both abroad and at home.

淮扬菜系作为我国著名的菜系,有着深厚的文化内涵。其悠久的历史、独特的风格、精湛的技艺、独特的神韵蜚声海内外,成为中国菜系中具有浓郁芬芳的奇葩。淮扬菜注重口味和品种的多样性,注重菜肴的营养结构和比例,其最突出的特色是保证各类营养素的供给合理。但是近年来淮扬菜及其经营企业发展迟缓,不温不火,没能像川菜、粤菜、鲁菜、浙菜那样迅速走红,在我国餐饮市场占据一时的领军地位。为发展淮扬菜,扩大淮扬菜市场占有率,我们有必要作视野较为广阔的分析与思考。[1]
餐饮旅游业是旅游业的重要支柱之一。大力发展以淮扬菜系为龙头的江苏餐饮旅游业,既可以推动餐饮业的发展,促进淮扬菜系的传承和发展,又可以加快江苏地区旅游业的发展,实现餐饮业、旅游业的并肩发展。
